These are all great suggestions, but I think I’d choose to stay at the Castle Valley Inn. The tranquil escape and bountiful breakfast sounds amazing!

I have been wanting to try an Under Canvas location.. I’ll add that we very much enjoyed our Fairfield Inn and Suites stay in Moab..great pool complex and other amenities, too
We’ve stayed at the Fairfield Inn as well, though just for a night as we were traveling through one time. There are a number of chain hotels on the north side that are nice too (there’s an Element also that’s quite nice).
Casitas looks like a lovely place to stay for a touch of elegance blended with adventure. Sounds perfect.
It’s got a nice restaurant too, and is just down the street from the food truck park and the Jail House Café, so great location.

There are a number of Under the Canvas locations, though the only one we’ve been to is Moab at this point. Definitely worth a visit.
